At one point in my academic life we had a class potluck every 10 weeks. I was not about that “do the most and show off” life. I just wasn’t. But I wanted to bring something tasty yet easy to make. Enter: Ice Cream Pie. My old roommate named it Ice Cream Pie because, after sneaking some of the filling out of the freezer, it tasted like ice cream. Why else, right?!
Okay, really this started as cake icing and filling for my strawberry brownie shortcake and I had leftovers. So, I stored it in the freezer until I went to the store for some crust.
What you’ll need:
- Pudding Cream (recipe)
- Mini Graham pie crusts
What to do:
- Prepare the Pudding Cream according to the recipe here.
- Spoon the mixture into the mini crusts.
- Freeze for about 3 hours
That’s it! That’s literally all it takes to make Ice Cream Pie. It really does taste like vanilla ice cream (a little, lol).
